I was wondering what information on houses is available to Real Estate agents through the MLS isn't available on Redfin?

Is there a way to find out if there's an active loan on a house for example?

Redfin can only display what the local MLS allows plus public data. The MLS listing might include agent notes, homeowner contact information and other pertinent but non-public information.
Most real estate agents have the ability to find information about mortgages.
Most county websites do not allow online access to mortgage amounts and mailing addresses.

I believe the mortgage information is passed out by former lender or by whoever you contacted when you fished for a refin.
I am still receiving mails from lenders inviting me to refin on the primary I purchased 11 years ago, based on my original loan amount.
If they know I already switched to a 15-year fix and have only 5 years left on the loan, they would stop sending mails to me long time ago.
